The magical ingredients – so many Super Foods!
Corn, black beans, diced tomatoes (I like the fire roasted hot kinds)
Chop, chop, chop…add 5 scallions, 1/2 a red onion, and 1 red bell pepper
Chopped bunch of cilantro…inhale. Isn’t cilantro lovely? I had never eaten it until I married my husband, the great food lover.
You may wonder if everything I eat includes avocado? Hmmm…just about.
1/4 Cup Freshly Squeezed Lime Juice (fresh makes a difference!)
Honey, honey, how you thrill me, uh-huh, honey honey
Garlic (fresh is better too, but I confess – I use the jar)
That’s what it’s all about!

Black Bean, Cilantro, Avocado Dip:
1 Can Black Bean (drained and rinsed)
1 Can Corn (drained)
1 Can Diced Tomatoes (any kind, but I like a little “fire”)
5 Scallion chopped (green onions)
1/2 Red Onion chopped
1 Red Bell Pepper chopped
1 Avocado, chopped
1 Bunch Cilantro chopped
1/4 Cup Lime Juice freshly squeezed
2 Tbsp Garlic
2 Tbsp Honey
2 Tbsp Olive Oil
Stir. Enjoy with good chips. And you will enjoy.
