Hot Mama Spinach-Artichoke Dip (Slimmed Down Version)

Why I chose to post a hot dish when the East Coast is hitting 90 degree temperatures today, I don’t know.  Last Saturday it snowed.  Really.  And killed my 30 tomato plants.  I am suffering.  Dip helps.

To make a hot dish more appetizing on a warm spring day, the plain old Hot Spinach-Artichoke Dip was changed to Hot Mama.  It’s already more appealing, isn’t it?

Eater Beware:  Dish easily inhaled in one sitting
1 Cup Cottage Cheese (Low-Fat)

Combine with 1/2 Cup Non-fat Fage Greek Yogurt (protein!), 1/3 Cup Milk, 4 Ounces Cream Cheese

Stir it all together, shake it all about…this made me want to do the hokey pokey…it’s that exciting

1/2 tsp Dry Mustard (I was out of dijon :(, 5 Tbsp Parmsan Cheese, 2 tsp Garlic, 1/4 tsp Pepper, 1/4 tsp Salt, 1/2 Cup Mozzarella Cheese (Part Skim)

Blend, Baby, Blend
Add 1 1/2 Cups Spinach.  I only had a little fresh stuff, so I mixed it with frozen.  It’s a beautiful thing.  Add 6 Ounces Artichoke Hearts, drained (from the bottle!)  
Give it one more whirl with the mixer…
Put in 8″ round pan.  Top with 1 Tbsp Parmesan, 1 Tbsp Mozzarella, Sprinkle of Paprika.

Bake at 350 degrees for about 25 minutes, or until golden and bubbly

Then you, my friend, are in biiiizzzness.  Perfect for summer barbecues, beach dishes or pot-luck!

I purposely drove an hour to get that blue corn chip from Trader Joe’s.  Just for this dip.  Oh.My.Yum-Yum.

Your child will eat any vegetable if it’s dipped in this stuff

Brynne bit, chewed, and went straight to heaven.

Hot Mama Spinach-Artichoke Dip
1 Cup Cottage Cheese (Low-Fat)
1/2 Cup Non-Fat Greek Yogurt
1/3 Cup Milk
4 Ounces Cream Cheese
(blend)

1/2 tsp Dijon Mustard (dry or wet)
5 Tbsp Parmesan Cheese
1/2 Cup Mozzarella Cheese
2 tsp Garlic
1/4 tsp Pepper
1/4 tsp Salt
(stir)

6 Ounces bottled Artichoke Hearts (drained)
1 1/2 Cups Spinach (fresh or frozen, it has same nutritional value)
(mix with blender)

Top With:
1 Tbsp Parmesan
1 Tbsp Mozzarella
Sprinkle Paprike

Bake at 350 for about 25 minutes, until golden, melted and bubbly
